Tonight's dinner: sausage stuffed bell peppers and parmesan zucchini chips. I used the filling for the sausage stuffed bell peppers from this recipe, but I used full sized bells instead of mini. I also baked them at 400° for 30 min instead of grilling, then put the cheese on top and baked them for another 15 min. This made enough filling for about 6 regular peppers, but I only had 4, so I halved half of a large zucchini and stuffed it too! I used the other half of the zucchini to make the baked parmesan zucchini chips. This is my favorite meal in a while; it was glorious!
